Fall brings full of seasonal taste. Night gets longer and the moon gets bigger.

Freshly harvest rice is one of the greatest teat of the year. So why don’t we celebrate the pure white of rice with white #2 Neko Manma. This one uses enoki mushroom but any mushroom is good.

Surve: 2 cats

Cooking in: 15 -30 minuets

Preparation: 5 minutes

For the miso soup

・2.5g konbu

・100g enoki mushrooms

・100ml soy milk (unsweetened)

・80g tofu

・25g miso of your choice ( Recommend sweet barely one!)

For the rice

・1 cup (160g) Rice of your choice

・Little white sesame

1: Cut the konbu in small pieces. This is easy with kitchen scissors. Soak the konbu in 200ml water for 5 minutes. To get the most out of your konbu, you can also soak it overnight with water.

2: Cook the rice following the instruction on the packet.

While the rice cooks, enoki (or mushrooms of your choice) into small pieces and tofu into little square shape.

3: Add the konbu with the soaking water, enoki and tofu to the frying pan. Bring to a simmer and turn the heat low.

4: Add the miso to the frying pan and stir it in the mixture. Add the soy milk and stir. Stir in the cooked rice and sprinkle with white sesames to serve.

Mix it and fix it! Eat like a cat.

Enoki and any mushrooms has great ability for detox and keeps smooth digesting system. Also many types of mushroom has β-glucan, which helps us to keep good immune system.

Tofu and white sesame are keeps our body, throat and chest from dehydration. However it also can take heats from your body. So it’s good to eat them as warm.

All together, it’s the great mixture in drying and clod autumn time!

So we can keep enjoying the sweet moon and meowing.
