Bread Miso is a circular food ecosystem started in Rotterdam.
We transform leftover bread from the city into miso through fermentation — turning what is often wasted into something nourishing, flavorful, and meaningful.

Bread is one of the most wasted foods in the world.
Miso is one of the oldest fermented foods in Japan.

"Bread Miso" brings these two realities together.

By collecting left bread from local bakeries and restaurants, we give it care and allowing it to transform.
Through fermentation, bread gains a second life as "bread"miso:
a living ingredient that carries both flavor and story.

But Bread Miso is not only about food.
It is about connection — between cultures, people, and the city itself.
Because we together, taste better ♡
